To be fair, we're getting much of it from the lining on receipt paper and packaging labels, so it's really hard to avoid.

Whew, I should be OK... I stopped eating receipts and packaging labels YEARS ago!

Well, wood isn't really toxic to the human body while plastic is, so the answer is kind of self-explanatory.

Many types of wood can be toxic to humans, and exposure to wood dust can cause a variety of health issues:
Oak and beech: These woods are considered confirmed human carcinogens, and their dust can cause upper respiratory tract cancer. Oak's tannins can also damage the stomach, intestines, and kidneys, causing constipation, diarrhea, and bloody or black stool.
Yew: This wood contains toxic substances that can cause wood poisoning if not handled properly. Yew can also act as a sensitizer.
Ebony: The dust from this dense wood can be harmful if inhaled.
Walnut: This hardwood is known for its toxic properties, and exposure to its dust can cause wood allergy symptoms.
Western cedar: This wood has been linked to the development of asthma.
Purpleheart: Dust from cutting and sanding this wood can irritate the skin, eyes, and respiratory system, and can also cause nausea.

Yeah but these woods are not typically used for cutting boards (and only some of those listed are toxic if ingested) so...
