Both devices are unlocked, which one should I go? I know the S24U is the way to go in terms of Camera usability but the bigger screen of the fold is also tempting. I appreciate your suggestions.

S24U put a good case on it with a screen protector. It is a tank.
But the price difference for you being so little if you want something new, get the Fold and be super careful with it!
You can also wait for Pixel Fold 2 which comes out in about 3-4 weeks. Don't worry there's always deals for these phones!
