You are guaranteed a new battery and new IMEI. If they determine the screen has a scratch or touch defect they replace. I've bought over a dozen trade-in Renewed phones and all appeared to have brand new screens. This is why I only do trade-ins with Samsung direct. Avoiding the fake and g eBay and Amazon "reconditioned" falsehoods.

However, as an option for the average user's daily driver phone the S21 is an easy call as a winner given that security updates for the S21 should keep coming through January of 2026 while the Pixel 5 became abandonware as of October of 2023(!).
Although at least 10 months newer, the fairer comparison to the S21 is probably the Pixel 6 given the relative specifications and support dates.
