When did they do this? All I can find are instructions on how to disable alerts for their own phone, or to disable it they must find it and remove the battery.

According to Apple, you can only disable the AirTag by removing the battery:

Last three paragraphs

"To disable the AirTag, set of AirPods, Find My network accessory, or compatible Bluetooth location-sharing device and stop it from sharing its location, tap Instructions to Disable and follow the onscreen steps. After the AirTag, set of AirPods, Find My network accessory, or compatible Bluetooth location-tracking device is disabled, the owner can no longer get updates on its current location. You will also no longer receive any unwanted tracking alerts for this item."

1. Fkin car technician disabled my airtag and used my car to places and wasted my gasoline. I never going back to that place anymore. Airtag is useless too.
2. My luggage got lost and airtag inside got disabled in the airport where I arrived (outside US).

In my knowledge thats half truth! Its intent is to find a misplaced item or help with stolen item. So, if you are really worried about an item being stolen, you should mark it stolen. And then Apple should prevent it from disabling . Have u tried this?

These are great for annoying anyone in your house that has an android (it will constantly give them stalker alerts).

Stop clutching your pearls and learn to read. It specifically says the way to disable an AirTag is to remove the battery. Your statement that "Apple allowed other iphone users to disable it without even touching it" is wrong and documented in the links you links you share a "proof."

There's even a screenshot showing that the steps to disable it require you to open the device and remove the battery.
