Metro takes 1mo to fully port a GV number by default since its landline/VoIP but you can call their port dept @ 800-518-7519 a few days to a week after activation to speed things up -- if you find a rep who knows what they're doing then they can complete the port sooner otherwise most reps will tell you to just wait until its done (which will be 1mo from activation)

I tried calling once in the past but the rep didn't know what to do and told me to just wait for it to finish -- I didn't care about the number or service so I didn't bother calling again (wanted the phone for trade in)
EDIT: Nevermind, got the answer. Transfer must get through in order for deal to work. Will keep trying.

For this price, there's nothing to lose. You can trade them in at best buy for gift card more than what you paid.

I would setup the phone since it'll automatically see the pending Metro eSIM on startup then you can try moving the eSIM to another compatible phone if you want to access your online account in the future -- otherwise just delete the eSIM and factory reset the phone (do a basic setup using wifi without logging in to your Apple account) before trading it in
I would try to move it to another phone just in case you want to add more lines or port out the number for another carrier promo
