Personally I just went the used route. Found one with the sensor and 100% battery in good condition and saved a couple hundred bucks
I have the Ultra 1 and absolutely love it, and I don't see a need to upgrade to a Ultra 2 or the new black one and I want to upgrade but there hasn't been much improvement or new features to justify the cost difference of a Ultra 1 vs Ultra 2 IMO. You are likely to get better deals especially if you are willing to go refurbished/renewed or used. (Ultra 1 Renewed is $499 on Amazon right now)
The main new features you get with Ultra 2 are:
Double tap gesture support
On-device Siri with health access
Precision finding for iPhone
Hardware differences on the Ultra 2 vs. 1
1000 extra nits brightness on the Ultra 2
S9 Chip (vs S8 on Ultra 1)

ya it's been this price at least since a few days before the keynote when i checked. i'm also waiting out, since it's been lower before. but i might get impatient and just get a series 10 instead. it's a hard choice tbh

Love this thing. My first smart watch period. Prior to the AWU2, I was wearing Fitbit and Gshock. No comparison. Excellent functionality and what seems like infinite useability. Nice range of accessories and bands. There is nothing like it.

I have a Garmin and I just got a stainless steel Watch 8. I used Garmin for my main watch for more than 6 years and I would continue to use it. I also have a number of nice collectible analog watches which I never bother to wear because I need notification ability for my work apps. The ONLY reason I got the Apple is because my wife wants something elegant for when I'm dressed up.
For a sport watch Garmin is pretty competent - at least a month of battery, pulse oxy sensor, solar. I vacation travel with it without needing a charge cable. I think these three are a MUST in any sport watch and Apple Ultra is nowhere near that. For the same price as the latest Garmin Fenix line, Ultra just doesn't make sense.
Otherwise, for simplicity, software integration and as an elegant accessory/jewelry - the regular iWatch is a nice addon. It's cons is the super annoyingly short battery life. Without an oxy sensor it is almost useless for a sport watch though.
Accurate but just one more thing - sleep apnea detection is now coming to Ultra 2 and not Ultra 1. If you're looking at the used market, Ultra 2 has come down enough I think it's rarely worth picking an Ultra 1 over it that will also tend to have less battery health left. But certainly worth considering for a better deal.

I was going back and forth. I ended up with a mint 1 for $380. The 2-300 hundred more just isn't worth it. The sleep apnea would be nice but I think it's weird that one sensor that would help with that is not on the new watches.

I got in on that same Stainless Steel Series 8 deal from Walmart, and have not opened mine either. I am waiting til the last few days of its return period, to see if any similar fire-sale deals on the Series 9 come out in the interim. If not, I'll open it in the last few days, see if the watch charges up/battery is fine, and go from there. I plan on keeping it, as $299 for a recent stainless steel LTE watch with the oxygen sensor intact is too good to return.
