Last time I picked up the D3 Everday 3-qt saute pan, but it was $70 after discount versus $85 today. I usually look for items which have a greater than 50% discount, these sales happen every month or two, so don't be too concerned about missing out, it'll come back around.
Sauce pans: There is a lot of good inventory at good prices today and I would recommend getting both the 2 quart saucier [homeandcooksales.com] and a 3-quart saucepan [homeandcooksales.com] (which are each $76 after coupon). The All-Clad steamer insert is an outstanding accessory for the saucepan but it's not available this time around.
Skillet: The 12' fry pan w/ lid [homeandcooksales.com] is a must-have and $85 after coupon is not an unusual deal but still that's close to as cheap as it ever gets.
Saute pan: A 3 quart saute pan is another staple pan but the D3 that's often available for around $70 isn't priced well this time. I would consider the D5 for $85 [homeandcooksales.com]. I am not a fan of D5 for all your pans but for the saute pan the heavier D5 would perform well.
Stock pot: I recommend having an enamel-coated cast iron Dutch Oven in your kitchen (that's not All-Clad), and if you're tight on space and budget then you could use that as your stock pot as well, but if you have room for both, get the All-Clad D3 8-quart [homeandcooksales.com] stock pot.

As a full-time nomad, I travel light, but given the variability of cookware in Airbnbs, I'd like to take either a fry or sauce pan (with lid). I'm thinking the sauce pan is more versatile (for pastas etc in addiiton to eggs / meats), am I thinking about it the wrong way?

If I had to pick one pan that could be used in a pinch for anything from frying eggs to braising meats to boiling water to making rice or popcorn, then I'd probably choose a covered saute pan (like the 3qt D3) or a bigger saucier (like the 3qt or 4qt), or even the 11" french skillet. Sauciers are like sauce pans but lower and shallower, with curved sides. French skillets are the same thing but even shallower.
In other words, if you were to line them up from tall and deep to low and shallow, it would be:
Sauce Pan >> Saucier >> French skillet >> Saute Pan >> Fry pan/skillet

They had 60% off on a bunch of options, and the graphite cores are supposed to not only conduct heat better than copper, but be super light vs copper core alternatives (and cheaper with discount, as well). So, maybe take a look at some of the graphite core options... there are some great discounts even before that extra 15% off.

While I do travel light (it's getting heavier by the year lol, and my carryon has made way for a slightly larger than carryon that's convenient to carry but needs to be checked in), I make space for a few luxuries (weightlifting shoes, and now cookware).
I was leaning toward the graphite on the recommendation based on weight, but I'm ok giving up a lb of weight in favor of being able to sear a proper steak (not as good as cast iron, but I can live with that) with the D3. I don't know if going up to the D5 is worth the cost in weight?
Is this [homeandcooksales.com] D3 (I couldn't find any information on the page), I would like a lid so it's a bit more flexible.
