They say don't use metal bristles as they say they break off and can be left in cooked food and you eat them and are dangerous

Correct, but this should be fine for occasional deep cleanings, not used every time.
Use this to really scrub the grates clean, then go over it after with a normal brush or oiled rag to remove any risk.

I recently had a grill brush with similar metal bristles start shedding the bristles. Threw every similar brush in the garbage can in short order. I'm not trying to send anyone to the hospital with a metal bristle in their throat.

I ordered what looks like a spatula with chainmail on it. No chance of chainmail breaking off and sending someone to the hospital, so far it has worked great.
