Your best bet is prob get the Total one for the 60 day unlock then go with Tello. Only $8/mo for unlimited voice and text. Easy to adjust plan temporarily too. For example maybe a trip comes up and would like to have some data, can always bump the plan up for a month and right back down the next pretty easily, that sort of thing.
Without activating, I can't seem to login into my new Metro account to cancel service (I don't recall the new number they assigned me). I thought they would send a physical SIM along with the phone. I checked the phone and my emails for an eSIM QR code, but no luck. I don't want them to charge me next month for phone service that I'm not using.

Regarding activation, one thing to bear in mind is that their unlock policy says that " Three hundred sixty-five (365) days must have passed since the device's activation date" if you want to unlock it.

Presumably that normally refers to activation on Metro. So, in a year's time, will it unlock if you never activated it on Metro, but only on T-Mobile?
It is anybody's guess. Strictly speaking, they would not have to. You might try unlock in the menus and see if it acknowledges it was activated and says when it will unlock.
I would not guess that activating now on Metro would cause a problem with continuing to use it on T-Mobile but anything is possible.

Any suggestion on 128Gb Galaxy phone? It seems that Galaxy phones consume storage quickly without user intervention.

$99 if you xfer phone #, $199 if you want a new #.
I'm not giving up my phone # on google voice. I'm also not going to be using their service past the 1 month of service.
I plan on sticking in a t-mobile hotspot sim (with free international data) in month 2. (That still works, right?)
How do i register a phone # for cheap and use that to xfer?
