Great price on great product. They also have best instructions for cooking on their products, unlike some other brands. I serve this with roasted seasonal vegetables for a vegetarian entree but there are obviously many uses for it.

It is something to watch and may be healthier, however if you don't have blood sugar issues, or trying to control you weight and not indulging in massive amount of high GI foods, probably not an issue.

BTW, Pasta (generally) does not have a high GI, especially so if you don't overcook it. That great Italian cook "Al Dente" knew the secret. Pasta: glycemic index[glycemic-index.net]

If you are concerned about glucose spikes, like with pasta you can cool this down in the fridge and then reheat it.
