Even in town where I came up pigeons were a regular food for some. Baltimore was full of people that came from the south. Never did eat one myself and my father brought one home frozen that somebody at the bar gave him but it just sat in the freezer for a decade or so.
Have to stop as I just realized I am an old man telling stories which is something that I catch myself doing way to much.
Snapping turtles, I get, when stewed they're delish. Squirrels, not a lot of meat on them - the cost/benefit for those is kinda low - unless we're talking about fat city squirrels but they're probably filled with who knows what.
I did try pigeon in Europe - was like a smaller chicken with more bones.

It'll make a lttle under half a pound cooked, not enough for ten people but ...
... it's boxed stuffing dude. It's nothing at all like deli/homemade. Most people don't even like it. I wouldn't make more than a single box for whatever weirdos like stovetop.
