Classic science based book about cooking (not a cook book). If you like Alton Brown, America's Test Kitchen, or Serious Eats, this is the book that paved the way for them all.

This is a MUST BUY for the cooking enthusiast in your life. Consider it a reference volume. I've had a hardcopy for over a decade but am buying this digital copy because, for this price, why not?!?!?

High Five This book appearing in the earlier years of Good Eats on one of Alton's bookshelves is why I initially bought the hardcover version years ago.
