Last year Thanksgiving $1.99 Hulu plan is going to expire this month.
Two options:
1. When you cancel current $0.99 plan, it will give $2.99 plan for 6 months.
2. Cancel current $0.99 plan and create new account during this year TG promotion of $1.99 or new promo price with new mail id.

Can anyone confirm that the Disney+ add-on most of us also took advantage of will also stick with option 1 of the additional 6 months?
Yes, you can.
Do you mean they did this last year when you signed up for the offer, or this month after the offer expired? That is what they are supposed to do now. They only agreed to honor it for a year.
I also use virtual cards to avoid auto-renewal charges, along with calendar reminders. Maybe they billed you a day or so before the year was over? That is common practice as well for these things. Please explain what you meant.
