I bought this back in September from Costco, and I am very happy with it. Full disclosure that I have not tried other machines. It's my first superautomatic. I learned a lot from reddit and other comments in previous posts. There was a break-in (dial-in) period at the beginning. We used Lavazza beans during this period. Soon, I was off to never buying another latte at a coffee shop. We still enjoy the atmosphere and baked goods, but bring our own coffee. The machine and some practice make a good latte.

Our top 3 favorite beans with this machine are:
Intelligentsia Black Cat Espresso (regular and sublunar)
Stumptown's Hair Bender
Equator's Tigerwalk Espresso

All of these beans are not oily, as it was suggested that you stay away from oily beans with this machine. Philips has great videos on maintenance. It was suggested somewhere to use the steam wand without the metal piece (silicone tip only), and it makes better foam, which we found to be true. It does make the machine a bit louder, though, when steaming milk.

The best espresso beans are roasted within 5 to 21 days. Look for beans that have a Roast Date stamped on the bag, and buy medium roasts, not dark roasts. The dark roasts are the shiny beans you talked about, and those are the oil ones which will gum up a superautomatic machine.

I will add my current settings if it helps anyone:

Grind Size: 2 of 12 (Finer) - must adjust while the machine is grinding. Counterclockwise for finer.
Aroma: 3 (Max)
Cup Size: 1 (Min)
Temp: Max - which you can adjust by reading manual.
Water 3 (Max) - We have hard water. Philips provides you with a litmus paper to test your water. We use the filter you purchase separately for ~$15 each on Amazon.

Lastly, our ratio is 3.5-4oz of milk per shot. Obviously, this will be to your preference.

Max temp is key. It's easy to adjust but read the manual

Anyone know the differences between this 800 series and the 1200 and 2200 series models on Amazon for $329 and $319?

I can only speak for the 1200. It is supposed to be Costco's 800 but with more chrome trim and features. Same machine.

Edit: Looks like there may be some subtle differences, but I could not verify them.

Then your best option is to find a local coffee roaster. I've found a nice small mom and pop shop who roast their own beans every week. The difference between store bought and fresh roasted is amazing. I can't go back to store bought beans. So bland. The best thing you can do even before buying an espresso machine is to find beans that are less than a week old. I only have a a drip maker but I can make some of the most delicious coffee with the freshly roasted beans. I also make a strong double strength brew to use as an add shot to matcha lattes.

1200 has chrome, but I believe also comes with a filter (800 can use one but does not come with one), and the heating element is supposedly upgraded, and a slightly better touch control screen as well.

Brew group is the same in all these Philips models, and is highly regarded.

This is a tempting price, but I use oily beans because I like dark roast. I would love one touch coffee, but I don't need the headache of the chute clogging. I use a Baratza Sette and it handles oily beans, no problem.

If you don't have a local roaster or just want to save money, buy green beans and be your own roaster. Green beans from places like Happy Mug are very competitive pricewise, and you can get amazing variety/quality cheap.

I can do a pound of beans at a time in 40 minutes, and it works very well for me. The air roasters are just too small, and the fancy roasters cost $400 or more. These generic looking stir-crazy machines work well. There are several roasters that look the same but I would stay away from the 800g capacity models, go larger. Also, you need something to cool the beans immediately after roasting and remove the chaff. I use this and a dustbuster, and it keeps the mess to a minimum.

You can find some cheaper deals for bagged coffee on SD from time-to-time, but I have been very happy roasting for myself. Fresh roasted is wonderful. I roast at 180c for 20 minutes and 240c for about 20-20 minutes. As an espresso drinker, I'm very happy with this setup.
