I couldn't find info on the RAM slots, but if it is upgradable, this looks like a very solid mid-range laptop.

For the RAM, I understand that it's a 1x8GB, should have 1x empty slot.

12th Gen i5, recent-ish, not the newest.
DDR4 RAM, not as new as DDR5, but increases the chances of it being upgradeable. Whenever you see LPDDR5, it is always soldered. Being it's a lower end laptop I wouldn't count on it having both sockets for an additional RAM module, I've experienced HP saving money on that before. You'll likely need to remove the 8GB to install a larger module, how much larger module is supported also remains to be seen.
I didn't spend too much time looking for a service manual, but the first one that I did find for that model had the wrong generation of processors so I didn't research it any further.
