You can, but you need to also check max amperage. Last time I checked, single 48v battery had better amp rating than 12v batteries connected in series. Price was comparable.

I'm wondering if this would be good to run 4 dashcams in a car with the car off? How well do these do in heat if it's stored in the car during the summer?

No. Amperage issues and ohms.
I fair price for a lithium upgrade with installation a four year replacement plus four year prorated from the manufacturer of the batteries not the dealer is about $2500 in palm beach FL. Just as an example.

I do something similar (Front+Rear Camera) but I have an extra battery tray in my truck in the engine compartment. You need to consider how you plan to charge the battery. Mine is charged directly off the alternator using a device (Charges primary, then charges secondary). If you have a large battery like this in the drunk or someplace wiring is tricky for the cameras. My charging device isn't compatible with Lipo Batteries (Technically), so I went with a cheap 12v from Costco. Works fine you can likely get weeks of recording over night or whatever before having to charge it. Can also hook it up to an inverter for portable power in a pinch.

Way overkill, look for something around 5-20ah for a fish finder. Much cheaper and much smaller footprint.

Great price, raw lithium prices are down as production ramps up. These would be good for a trolling motor too. Lithium does not like the cold, and may not work below freezing temps.

What type would work better in an unheated space outside that can get down to -10f?

LFP with temperature cut off, but if you want it to keep charging/working lead acid/deep cycle or LFP with internal heaters but you are likely to loose a lot of power for heating. Could put batteries in an old chest freezer.
