I would tend to trust a company less if it produces flour by the pound and not the kilogram.

This is also a great point. Only exception is ton vs metric ton. If they produce tons, I go with 2000lbs or 1000kg, as long as no cats are involved in monitoring production, quality control testing or quality assurance release of the material.

i was wondering what the difference is from any other flour. i don't need 12lbs of flour of any kind, but many thanks for the knowledge.
It is ground much finer, almost like powdered sugar consistency. It does come together in generally a softer dough which at the same time is also a bit stretchier. We use it for homemade pizza in the Ninja Woodfire Oven. It works great. And in the end, it's a lot cheaper making our own pizza that way than buying it frozen.

Same thing for non-organic oats which is contaminated with glyphosate.

Agreed... Non-organic grains of any type are a HARD PASS for me and my family.

Dude, relax…
The thing about organic food is that these people eat out and unless they look for that foo foo health food, NO ONE uses organic or 100% organic. So either they don't eat out or break their rules.

Dave Portnoy isn't reviewing organic crusts, sauce, cheese, or whole pies.

Pizza flour, like bread flour is higher protein 12-13% vs All-purpose at around 10%. This important for gluten development, crisper crusts. Often made from hard red winter wheat.
