I have a T-Mobile family plan. Can I buy this phone, checkout as guest, add and activate it on my T-Mobile account, and then it unlocks after 60 days automatically?

New activations are only on the Verizon network. They are maintaining T-mobile plans for existing customers on those plans for an undetermined time.

You could port and pay for the second month, the problem may be the phone doesn't unlock until day 61 as happens , and you'd have to start the port early as generally only active numbers port, so you probably pay a third month. Got a BestBuy account with a coupon? They have plans so maybe a discount.

Actually I'd rather not mess around - maybe I'll buy, order 1 month of new service, let her play with the phone for 60 days until it unlocks, then switch her sim over. That way there should be no downtime and I'm just paying for that extra 1 month service on ST.

I don't get how the remote unlock works. When you have no service on day 60, you cannot receive messages? Wifi will provide internet access but how does this exactly work? Who will initiate the unlock process? Does the phone has a timer which will trigger an app to check some server for the code?

Set a reminder in your calendar to check it, you don't get a notification.
ST/TW/TF iPhones have been unlocking automatically for several years, there's nothing you need to do as long as you're connected to wifi, it couldn't be any easier.
