An easy way to understand this is to remember:
Voltage is pushed. Current is pulled.

If you go over the spec'd voltage you'll do damage as the components are only rated at a maximum voltage. So never go over the voltage ratings.

However, current is drawn by the device up to its needs. If you have 20 amps available but your D2 maxes out at 15 amps, you're just not able to use those additional 5 amps but no damage will be done.

So you can have a 10w / 120v nightlight with a maximum amperage of .25 amps on a 120v/20amp home circuit. The extra amps just don't get used. But if you wire up a 100watt 12v light and plug into a home outlet if will do bad sparky things and burn up immediately because it is not built to take the 120v that is being pushed into it.

FWIW: The XT60i end essentially tells the Ecoflow unit "It's ok to take 15A" (as opposed to the normal limit of 8A for car charging use)

This is called overpaneling; it's fine as long as the combined panel voltage stays within the rated input voltage.. you'll just get some clipping if your two panels end up able to actually produce more than 15A / 500W, as that is the max the D2 and D3 (with their 500W MPPT controllers) will use.

The main thing you want to avoid with solar is exceeding rated input voltage of your MPPT controller.

Isn't this already included in the eco-flow batteries as DC5521 to DC5525 cable ? Or it is different.

If you google search "DC5521 to DC5525" you will see a quite different cable.

DC5525 and DC5521 is something you usually see on cable modem/switch etc.

Yup, that was Nov 2023. Saving 2 for a deal of the decade big EcoFlow portable battery station. ATM, I wouldn't mind a 200-400 ah LifePO4 battery decade deal though to replace my 200ah AGM electrical setup

Wiring those in series will let you hit 400w max with your panels. Wiring it in parallel will limit you to 285w max. 38.08V X 10.5a=400w vs 19.04v X 15a = 285. A Ecoflow Delta 2 has a 15amp limit per port. A river 2 256wh for example is limited to 8a

My ecoflow didn't. I may have read that if you buy the panels with the power station it might come with the cable.

I needed the cable because I bought the Delta 3 1500 without the panels because I already had two 100w rigid panels. I have tried the folding panels in the past, and I feel like they are super fragile without the glass and metal support material.

Some of the Ecoflow units come with one. Like my 1st gen River Max did. But my Delta 3 1500 didn't come with solar cables.
