I was a T Mobile customer for 20+ years, and modern day T Mobile sucks - they literally suck money out of customers at every opportunity.
So I left for Visible Unlimited at 1/4 of the cost and haven't looked back.
800 off when trading in an old S10 sounds like a slick deal.

Only thing in your case is if the S23 is still not paid off you may want to wait till it is fully paid off. Your account may not be ready for an upgrade unless you have another line that was paid off. If you switch you loose any remaining credits on S23.

What i did was, i ordered S10 off ebay for like $110, then i'm trading that in for S25+, and sell my S23+.
