The paddle switch Grinder needs less pressure to turn it on so when you drop it etc it is easier to turn off as the switch stays on by itself but is not as safe. So yes it just comes down really to preference

Variable speed is the way to go. Wire wheels aren't really meant to be used at full speeds.
Only way this could be better is if it had one of their newer low-profile heads.

Does the paddle version have variable speed as well? I've never used an angle grinder with variable speed, how much should I want this? I currently have an M18 paddle grinder which I guess is a previous version.

Hey! I'm not sure if this is common knowledge or not, but it seems the deal varies based on where you start on the site. Hopefully I'm saying this correctly: but say for example, you first go to this product "M18 FUEL 18-Volt Lithium-Ion Brushless Cordless 4-1/2 in./5 in. Grinder with Paddle Switch with Wheel" here: https://www.homedepot.com/p/Milwaukee-M18-FUEL-18-Volt-Lithium-Ion-Brushless-Cordless-4-1-2-in-5-in-... [homedepot.com] and then where it say to click and shop offers, where it takes you to other products that are eligible to be your 'free' tool or battery, several other tool options show up! When you follow the OP's link, and then click to see the other products to complete the deal, it only shows the other version of the grinder with the different switch type, or a battery. I can't be certain, but to me, it looks like the other versions you mention are actually available as part of this hackable deal! There are even chop saws, circ saw, etc. available. Good luck, hope this helps!

Not that weird with fabrication in mind, switching discs can be a time sink. If you're doing it often, you can save time/money with two grinders - e.g. one with a cutting wheel, another with a flap wheel for beveling/deburring. Or a grinding wheel for rough work + flap wheel for finish work. Etc.
