I do have a pFsense router, but it's purpose built, and I purchased a used Intel multi-NIC PCIe card from eBay - they are usually "pulls" from decomissioned corporate server hardware.
I have had the same thought as you and have been tempted to try a dual NIC GMKtec as a router, even if they are Realtek. My earliest pFsense router used dual Realtek NICs and worked ok IIRC, although at this point I have gigabit fiber to the house and that original pFsense box wouldn't route at gigabit speeds on my home network.
It would be easy enough to "audition" one of the GMKtec dual-NIC boxes with pFsense - use your own NVMe drive to install pFsense on, see how well it works, and if you decide to return, swap the original NVMe drive back in to send it back if it doesn't work out (presuming you have a 30 day Prime account return window).
I'm kinda fascinated with these GMKtec boxes and have the one in this deal running as a dedicated Home Assistant box, and it's great - I'm tempted to get a dual NIC version to experiment with. .
I believe the issue with Realtek NICs in a router is that they "offload" a lot of processing to the CPU, while the Intel NICs have onboard processing.
