we have local corn which i know my cousin parboils and freezes. no room in my freezer to do such things so i only eat corn on the cob in the summer.
No room in my freezer for cobs either --- I was trying to figure out how to freeze the kernels cut off the cob ...
As for freezing it, I've never done it on the whole cob before - but that sounds interesting. I have cut the kernels off and frozen on a cookie sheet for 20 minutes, then toss in a ziploc. It's so delicious. That's another yummy frozen treat - corn and peas. They taste pretty sweet and are fun to eat.
I think I'll do fried chicken for that though - that should be easy to make and take.
Oooh... maybe I could do cold fried chicken - cook it all up on Saturday and then be done with it. What do you think about having cold chicken?
2 large cucumbers, peeled and thinly sliced
3 green onions, thinly sliced, w/ 3 inches of green tops
2/3 cup rice vinegar
1/3 cup sugar
combine all ingredients; marinate for at least half an hour. with a slotted spoon, serve as a salad or garnish. serves 4.
nutrition per serving: 47 calories, 0.7g protein, 12g carbs, 1.2g fiber, 0.2g fat, 4mg sodium
so easy. i use one english/burpless cucumber, the ones wrapped in plastic so i don't have to peel and looks nicer. i slice pretty thin, but not paper thin. i let it marinate overnite so the water comes out of the cucumbers and the cucumbers get really sour. you can use shredded or thinly sliced carrot instead of scallions to make it colorful. you can probably water down the vinegar if you don't like it so sour. don't use tomato. my neighbor tried that and didn't work. it's great during the summer, esp if you are also eating greasy foods. my friends love it and ask for the recipe all the time.
i know some variations use hot oil or sesame oil to make it spicy or different flavor.

Rice wine vinegar is a vinegar made from rice wine/drinks (like saki). You can usually find it with the vinegar and oils section - or in the asian section of the supermarket. I love the flavor and smell of it. It's soooo yummy. I use it in a lot of marinades instead of regular vinegars.

Oh, and don't be too sorry for me. I haven't completely given up coffee yet - and that gives me raging heartburn too.

That sounds good! What is rice vinegar? I have used balsamic vinegar to make cucumber, onion, and tomato salad with pepper sprinkled on and I love it ... maybe I should try your recipie.

i have one calphalon nonstick frying pan. i always used nylon or wooden utensils and it still looks scratched and worn out. for some reason it also accumulated a sticky film of hardened grease that you couldn't really see and it wasn't non-stick anymore. that's the one i'm replacing w/ a larger 12in green cuisine cuisinart frying pan.
you will find rice vinegar at any asian food store and large supermarkets. they have all different flavors now for salads. make sure you get plain, regular, not the seasoned vinegar. i think you use the seasoned one to make sushi. it is less acidic and milder than white vinegar. i think you can use apple cider vinegar if you can't find rice vinegar. they sell this brand at my supermarket but funny thing i had to ask them to carry the regular plain flavor

my sophomore yr my older roommate decided to live in the law school dorm b/c it was closer to the library. the cafeteria was run by a different company than the other dorms and when the cucumber salad in the salad bar got old, they would mix something in to make creamy cucumber salad
how bout tomato and onion salad? right now i use vidalias. i just slice up some nice ripe tomatoes, slice onion into half moons, and toss w/ dressing i make w/ oil, vinegar, mustard, salt and pepper. you can of course use bottled dressing. very nice w/ steak.
pasta salad? i haven't done it in a very long time, but when i was in college i would make a big bowl of pasta w/ broccoli, cauliflower, peppers, etc and toss w/ italian dressing and that would be my carb and veggie in one. you could leave the veggies raw or you could steam them if you like your veggies softer.

Busy day today. Going up to my old hometown in MD to have lunch with a friend and her kids, then off to the local ice cream joint then back home. All this with 4 of my sisters in tow, as well as my kids. Fun times.
We have had such glorious temps the last couple days, but its about to come to a screeching halt. The Fourth is supposed to be a high of 96.
Surprised my baby sister with a graduation party last night. She had moved down here for the summer to get a job to earn money for college in the fall (where my parents live in MI, there is NOTHING as far as jobs go) and we hadn't celebrated her hs graduation yet. Gave her my standard grad gift - My First Care Package. So much fun to put together, and its always stuff I have on hand. :rofl:

Homemade ice cream sounds so good. DD got me in a mood for hot bacon dressing talking about it the other day. That is good over romaine, or potatoes for a nice German potato salad, or even over shredded zuchinni. Yum-O.
