Octopath is 8 short stories that happen to connect. SaGa Frontier was the same (and, IMO, done better).
I'd say Sea of Stars plays easier, although the story in Octopath is far better. Sea of Stars story is, sorry to say, not great. It drives the game but it's not really good. Both main characters are painful cliches and so is almost anyone you interact with. It is a fun play though, and has so many way to configure it to be enjoyable to play that certainly the better game.
Right now, if you made me replay one or the other though, I'd pick Octopath. Sea of Stars, especially if you do the secret ending, makes you not want to deal with the redo. It had the bad fortune to come out the same year as BG3 and TotK so it didn't get as much press, but its fans were pulling for it to be GotY. As much as I really liked Octopath's graphics, Sea was more fun to look at.

I do agree with you about the story behind SoS being a little lackluster - particularly (as you mentioned) the main characters. It's not bad - just, a little one dimensional.
Visually, it's a dang feast. I grew up in the heyday of JRPGs like FFVI, ChronoTrigger, Secret of Mana, etc - and this game REALLY hit a lot of nostalgic high points.
Sea of Stars is more like Chrono Trigger battle wise and was a fun revisit especially since it was an indie game. I only made it about 10 hours in and then life came up.
