Yes. Your pan is TOO HOT.

Carbon steel heats up fast and conducts heat very well. I typically don't go over medium or medium high heat unless it's a stir fry.

These pans are 1mm thick. It'll react to heat quickly but will warp when heated too quickly or heated too high. Get at least 3mm if you have induction cooking. IKEA is probably the best bang for your buck. 3mm thick, 9" for $30. 11" for $40

I got the 12" version from the last deal. However, I notice when I heat up my pan the bottom warps. The warping goes away when the pan cools, but I can't imagine this would be good for the pan in terms of longevity and temperature distribution. Any insights/techniques I should implement to minimize this phenomenon?

Yep, beats my Matfer, paid over $40 for it. Only quibble on this is the steep sides, but otherwise superior surface than Matfer.

The 8" is a bit small (~6.25" diameter cooking surface) if, say, you want to pan fry 10 frozen gyozas at a time.

Same deal as last time. Thanks OP for posting, I need to purchase these again. Had to return previous purchase because of bad shipping/handling; the products got damaged. Hope this time they'll package properly. Just imagine, they put one of these pans in a plastic shipping bag w/o any protection for delivery Big Grin

10" for 21$ is a good deal. Hopefully it's a decent pan. I've just gotten tired of dealing with ceramic pans that become sticky and flake off and I already have old school cast iron pans but they are heavy and the bottoms have rust and are damaged

It's a perfect size for omelettes. Unfortunately, that shape isn't great for flipping or rolling them.

Seeing lots of reviews with rusted pans after few uses. What's the deal with all the seasoning talk?

I've been waiting for a deal on a carbon steel pan, but 8 inches always feels too small to be useful for me
