A lot of people will probably make fun of spending this much on a coffee grinder. I will admit I was in that camp, but I have been converted.

My wife and I have cold brew coffees every morning. We make a concentrate with 12 ounces of beans and 7 1/2 cups of water using the Toddy system. We use Costco French roast beans.

The coffee got SO much better when we switched from a $40 burr grinder (we had two different ones that both broke after 6 months) to this thing it literally didn't taste like the same coffee.

I am sure there is some chemical / mechanical reason for this, but all I can tell you is it was a dramatic and not at all "subtle" difference in flavor.

We've been using this 2x a week to grind 12oz of beans for three years. Had to switch one of the gaskets, but that's it. The thing is built like an absolute tank.

I believe we paid $150, so this seems like a great deal.

Would maybe be worried about the white color as it will be caked in coffee grounds constantly, but who knows.

A good grinder costs money. This is an entry level grinder. If you have the funds, go for an Eureka one, but also depends of the coffee method you employ ( I do mainly espresso and you need a more expensive grinder for that purpose). For other methods, this should be ok

Any static electricity getting in the grounds? That's almost the only complaint I have with my current grinder.

Also, yeah, I'm a fresh grind coffee guy for life now. So much better. I've heard pre-ground coffee often adds wood and other things as a filler.

Yes, this grinder does not control static well. A tiny spritz of water into the hopper helps a ton! Without it the husks go everywhere and some grounds cling to the bottom Not many, but some.
Overall this is a excellent grinder for drip, pour over and cold brewing. It does not do very well with espresso levels of grinding.
It is also very repairable and well supported by Baratza. Our is well over 8 years old and still kicking along just fine with regular cleanings and a few teardowns just to clean out the insides.

I'm very drawn to this grinder based on your recommendation and the WireCutter review.

But what I don't understand is.. these don't seem to have a simple timer off switch that is standard on even entry-level $40 grinders.

Are you always expected to carefully measure out or eyeball the grind to see if you have the right amount for a pot? That is the type of thing we can do after drinking the coffee, not before.

Yes, you measure the weight of the beans and grind all of them. I agree that it's annoying not to have a time and is probably the reason I haven't already gotten this one

Will spare you all from coffee snobbery comments (although I have plenty if provoked) but will say that I got a Baratza Encore for Christmas in 2015. Approaching 10 years of heavy use (2-3oz of beans per day) and the thing keeps trucking along. I upgraded the burr for a slightly better one from them (~2019) but it wasn't necessary. Also had to replace the ring burr holder (~$10, 1 minute of effort) which is designed to fail in order to protect the more difficult to replace, more expensive conical burr and motor.

Great company, great support (go check out their YouTube repair videos), great product.
