Depends on your use case. They're really the same except the pro has a faster processor and comes default for more ram. If you're only going to use it as a Plex server and/or backup storage, then save the money and go with the non-pro.
The difference is the non-Pro has the Intel N95 vs the N305 in the Pro.
They are essentially the same CPU, except the N305 has 8 cores while the N95 has 4 cores. The Pro also comes with 16GB of RAM vs 8GB in the non-Pro. But the memory is easily upgraded if you need more.
The non-Pro is enough to be a NAS for storage as well as run a full media stack with Plex or Jellyfin doing hardware transcoding. If you ran a bunch of VMs you might need the extra cores in the Pro. But in either case if you're at the point of needing more cores you're going to need more than 16GB of memory.
IMO get the non-Pro and a 32GB kit of memory. Then install TrueNAS and have a great server.
