That was a different knife, the chef's knife. This is a Clef, I guess a chefs knife and a cleaver got it on in Babish's kitchen?
I bought the chef's knife for $7. Definitely worth the price. It's a $20 knife. If this clef is of similar quality, I'd recommend.

I bought the 6.5" Santuko when it was $7 one month ago.

It's okay for $7. The rounded smooth-ish handle can be slippery when wet.

"German Steel" just refers to 4116 steel/similar process high carbon steel where the process originated in Germany. FWIW. But yes knife brands love to wave it around instead of the specific steel alloy designation because it confuses people.

Consistent and proper heat treatment makes or breaks a knife.

I would never go with a no name brand when both the Victorinox Fibrox and the "made in Spain " Henkels are affordable quality.
