If I want 64gb of ram, should I just buy two of these or is it better to get 2x32
gb sticks?

I'm running an x570 with a 5800x3d and some 3000mhz sticks currently.

I think it would work cooler but really 32 gigs is all you need. To be honest ddr5 for some reason seems to be going cheaper in my opinion.

thats because ddr4 production is almost at an end. supply will get lower and prices will get higher

I believe the consensus is 2 is better than 4, primarily due to the reduced strain on the CPU's memory controller, easier troubleshooting, and potentially higher achievable memory speeds. I have four 16 gigs sticks and mine runs perfectly fine

Been dragging my feet on building a whole new AMD system, and had my eye on this RAM to upgrade my old 2017 PC con 5070, thanks!

You can get CL 16 for this price and size. There are Gskill sets on Amazon with an XMP of 3600mhz and CL 16. When you get CL 18 timing 3600mhz you are basically getting the same speed of 3200mhz CL 16.
I do not like messing with overclocking ram because I do not like constantly clearing cmos when my new ram timings won't post. Even if these are samsung or micron B or E die, your mobo might not be able to handle the OC voltage or timing.

Yeah, if you don't like overclocking ram, why not get the timings as tight as possible on ram that you already know will hold a stable XMP and not cause memory crashing. I oc everything except ram.

don't buy these sticks if you have high hopes of RGB matching other lights in your case. I have 4 sticks of this stuff and (after about 6 months) not one LED matches the color of the one next to it. I don't mean stick to stick, but LED to LED on the SAME stick. it's a bummer because they are so visible that your eyes go right to just how "off" the colors are to one another. The memory itself is (and always has been) super reliable though; jsut the LED quality is crap.
