I buy cheap wooden cutting boards and they last me years. All you have to do is make sure you wash BOTH sides of the board after use and then completely dry before storing. Washing/wetting only one side will warp and eventually break the board.

It's not bad. Just put a steak under the food you are cooking to use as a second layer so you don't dull your knife too much.

When I worked in a Carbone's for a bit in high school back around 2011/2012 our whole pizza line had a giant plastic board under our working space, and the sandwich station used plastic boards too. All my friends who still work culinary jobs today say they all use plastic boards too. Like you said, plastic boards have been in use for decades.

In addition to most certainly dulling knives, wouldn't a SS board be slick / slippery like a glass cutting board? Seems silly.

You can't address paranoia with logic. My hippy friends talk about microplastics all the time and avoid seed oils, then text and drive. The paranoia is more of a social thing than an actually minimizing danger thing.

He wasn't saying microplastics are a figment of paranoia - just that if plastic cutting boards were a big source of microplastics, we'd know it.

Idk about seed oils, but microplastics are very real, they're visible with even basic consumer microscopes and are found in nearly everything, everywhere, including our bodies (outside the digestive tract). Not really a hippy dippy thing. More sad than anything.
