For comparison, the MSRP on the similar configuration but with 32GB of RAM was $1,700+ (admittedly unrealistic). Best Buy was clearancing this 32GB RAM configuration for $1440, and a few Microcenter stores which still have them are selling them for $1000.

Apart from the LG Gram, I am not very excited about anything in the laptop (pretty typical specs for the price range, i.e., old CPU and 16 GB RAM).

16GB LPDDR5X RAM - is the question I had.
That means the RAM is not upgradeable for sure.
Great deal and price, but I want/need a little more ram and can't add it.
For most, 16GB is fine.

Example - 32GB of RAM will cost me under $100 for completely new RAM modules. But as you noted...The vendor will be charging me $200 or $300 for what is really under a $50 (16gb) RAM upgrade.
By no means was I expecting to find a $500 laptop with 32GB of RAM out of the box.
