Obviously the safest thing to do if you're planning on doing this is to root it during the return window on the off chance it bricks.

Live Google Maps isn't going to eat up all of the 64GB space.
As for apps on SD Cards... afaik android devices don't easily allow running apps off of SD Cards (this may vary a bit by manufacturer). At some point Google made this more difficult.... maybe around Android 10? Don't remember.
If you do root your device, look up "adoptable storage", and probably do some digging on XDA.

(The Tab A7 Lite has a different CPU but you said you have the A7)
The onn. has twice the storage though which would count for something depending on your usage.
Software tweaks can make a lot of difference between manufacturers but I don't see how onn. is going to have better software than Samsung. So no, probably not an upgrade.

That really depends on how you plan to use it. For me I will be running UI3 24/7 to monitor live security cameras, so for me it's worth $50 and speed isn't a issue.
Really, at $50... I consider this expensive. I believe it is worth closer to $7.50.
I had pretty low expectations but this thing is slow
