Pardon me but why are these things so wildly expensive for what they do? Even the original suggested price is absurd in my opinion.

Because it makes your camera/phone options MUCH cheaper, and analog image stabilization will give you higher resolution images/video than digital - in-camera stabilizing happens by shrinking the stabilized frame and adjusting its position within the raw frames. The higher the resolution, the more post-processing options you also have for additional cropping/stabilizing in any editing software you may use. Also likely lower CPU/GPU use in your phone, which will make it run cooler AND increase battery life by a possibly-noticeable amount. Small bonus that you may never use: tiny secondary remote w/screen for lining up selfie shots when you're you're own cameraperson.

Put more simply: better picture quality.
