Kind of a lot to drop on non-stick, since it'll eventually need replaced after a few years

I would never pay that much for nonstick… Nonstick needs to be replaced as the coating wears off eventually, regardless of what you do this is just the nature of nonstick.
If you're set on non stick and all clad then go to Marshall's or similar. They have tons of non stick all clad in their everyday essentials line and you won't notice a difference.

I switched from non stick to stainless a few years ago and never looked back. Pretty much nothing that I need non stick for, and since almost everything I cook, I add a little bit of oil to cook anyway, I have zero issues with sticking. Much prefer that to the toxic nature of non stick and the continual need to watch for scratching, etc.
