These upgrades appear to be worth the delta, but the question is: are they necessary for someone who doesn't actively code anymore, no LLMs, no video editing?

forget about anything else, a laptop's most important feature is the screen, it's what you will be looking at all day - at this stage Macbook Air's screen is not in the same ballpark (done by Tim Crook on purpose) as the Macbook Pro
As you mentioned the speakers are 3-4x as loud and clearer at higher volumes if that matters.
Only reason to buy an Air would be an insane deal
Have you been following the price of MBA lately? It's been going down like $50 every other week. Somehow that's not the case with Pro models.
