Cotton absorbs water but doesn't spread well, I'm assuming the poly heat gear would be water wicking so the water can spread throughout the shirt and evaporate better than cotton

Can be a lot of factors that contributes to you sweating more. Fit (straight, fitted, compression) or thickness / type of weave that . Doesn't depend solely on the type of fabric.
But in general, poly wicks away moisture better than cotton. While cotton is better at keeping odors at bay. No perfect fabric without the sacrifice of fit.
