If it's mainly the gameplay then SMTV:V will be up your alley.
If it's mainly the story/characters then YMMV.

Agreed. I went with the Xbox Series version because I wanted 4K/60fps. I heard the Switch 1 is like 720p/30fps.

Depends, I enjoyed SMT series but could never get into Persona series. SMT plays more like a to-the-point hardcore RPG. Persona has tons of dialog and day/night cycle that I dislike. Also the combat in Persona feels a lot less tactical because the games are so easy.
