Would I like this if I enjoyed Persona 5?

Depends on what you liked about Persona 5.
If it's mainly the gameplay then SMTV:V will be up your alley.
If it's mainly the story/characters then YMMV.

I wish they'd release a Switch 2 version of this.

Agreed. I went with the Xbox Series version because I wanted 4K/60fps. I heard the Switch 1 is like 720p/30fps.

Depends, I enjoyed SMT series but could never get into Persona series. SMT plays more like a to-the-point hardcore RPG. Persona has tons of dialog and day/night cycle that I dislike. Also the combat in Persona feels a lot less tactical because the games are so easy.

Just beat Metaphor and I didn't like the story but love the fight. I like Persona 5 and 3. Will I live Shin Megami Tensei ?

Persona has become a high school social sim where battles aren't really a focus. The day/night thing is tiresome after almost 5 games of it (p3, fes, p4, golden, p5, royal). SMT is all about demon collecting/battling, i.e. Pokemon for adults. I prefer SMT since I find the demons much more interesting than the high school stuff.
This is a decent price if you never played the original. The new story isn't that great and kind of silly at times, but the new demons are kind of cool, and there are many QoL features. They also made the harder difficulties a lot more forgiving than the original.

You should probably look up the battle system since it's a little different from Persona. SMT's press turn system relies on exploiting weaknesses, so you gain extra turns if you hit a weak point with the right attack (kind of like the 1 more thing in Persona). If you use the wrong attack, you would lose all of your turns or worse, get the attack reflected back at you. The enemies also benefit from this system, and early on, you could get chained to death by a lowly slime. There are no "all out attacks", but there are team effects like making your attacks all critical hits that can feel overpowered at times.
