It's easy to make your own bags from a roll - the only challenge is figuring out how much extra to cut off the roll:

Cut a sheet off the roll equal to the length of your food item, plus an additional 3-4 inches
Put the cut sheet in the machine and seal one of the cut ends, using heat only (no vacuum), as close to the end as possible - this turns the cut sheet into a open-top bag
Take the newly-created bag out of the sealer and place the food item inside, leaving as much room at the top as possible.
Place the open end of the bag into the sealer and vacuum seal - this removes the air from the bag and seals it shut
Use a Sharpie to indicate what's inside and the date you packaged it (unless you want to play "What's This and Is It Super Old?" later on)
You can optionally trim off any excess plastic outside the sealed area, but I personally don't bother

FWIW, I own an old Foodsaver and have to manually seal each end twice to better ensure there are no leaks, but the model linked by the OP appears to double-seal on the first pass, which is nice.

You remove air so things last longer and tend to freezer burn slower. Bags will be more expensive and more time consuming to store this way. You can also use these for Sous vide cooking.

The former. Oxidation is what causes food to become freezer-burned. Food also spoils faster in the freezer and on the shelf the more oxygen it's exposed to. Removing the oxygen from the bag greatly extends the food's life.

they include 8x12" bags, so i'd think minimum is 8" but my guess, it's at least 9" to give some space for yourself on each side, but yes, i can't find that either

Fg or those that own this, what is advantage over ziplock bags? Is the safe storage time dramatically improved? Is the cost of bags lower?
