With cloud storage and network storage (my preferred method), having a high amount of storage on your portable device isn't for everyone.

Folks need to make the "it's not adequate!" argument because their real argument is trite, they simply want to pay less money.

For example, my work m1 pro MBP 'only' has 16gb of RAM and yet in the 4 years i've owned it it has never given me any reason to wish I had more RAM. And i'm doing way more than just office and spreadsheets.
Basically, if you haven't used one of these machines, you have no clue just how well these chips run and how efficient they are.

RAM and storage are two different things. It doesn't matter how efficient Apple machines are--256GB of storage space is 256GB of storage space. It would probably cost Apple $10 to double that spec to something a bit less laughable, but no! That would cut into their "Let's sell them e-waste 'base configurations' and then gouge them on upgrades since everything is soldered down and they have no other choice but to upgrade through us!" business model. Steve Jobs is rolling in his grave.
