extra virgin olive "EVO" oil has to meet specific standards and criteria, as outlined by the International Olive Council
Have an acid content of less than 0.8 percent, that contributes to the flavor and quality.
can't be mixed or diluted with other types of oil. other types of olive oil labeled as "virgin," "refined," or "light" can include a variety of different oils.
During the pressing process, EVO can't be produced with extreme high temperatures or chemicals, to cause bitter or otherwise off flavors.

Open one, keep other closed. Store in same place (not warm, and darker the better).
Use the opened one as needed
After xx weeks (or longer), open the sealed bottle and do a taste test between the two bottles.

This is completely untrue. They're required to have most of that information and I'm looking right at it on my bottle. It's on the back, embossed/raised in the bottom plastic and even notes all of that EXCEPT harvest date - which, is helpful but not required.
