They don't really say it anywhere. I been downloaded the manual and didn't see. One of the you tube reviews says it's because Jackery wants you to use their panels. If you watch the reviews some will show you the haven't on the unit which has the specs.

1000W technically speaking according to the specs. The 60V max is a hard stop though, if you exceed the VOC, you're asking for trouble. That means You need to use panels not exceeding 60V VOC, but, you can run them in parallel. I do this currently on the Jackery 2000 Plus with some Boviet Solar 450W panels on a pergola and I run 2 in parallel to each port, so technically speaking I'm throwing 1800W of panels at my 2000 Plus and mine is rated for up to 1200W on paper, but, I'm not exceeding 60V VOC at any time. It's fine on low PV units like this to exceed the amperage so long as the VOC is under 60V, but there's plenty of stories about exceeding 60V VOC burning up units, I'd advise you to NOT run in series as running panels in series is addition to voltage, running in parallel adds to amperage but not voltage, but now you're talking a ton of copper wiring and more power loss over distance.
The short answer is, yes, you can throw big panels at these types of offerings. Is it efficient? Depends how good of a deal you get on the panels and how much wire you need to run as copper can get expensive depending what gauge and how long of a run. Signature solar can sell you a good deal on panels, but, they have a min order of 10, which again, you're talking 4 (big boy) panels at most you can throw at this thing before it's just a waste. Running 3 in parallel on each side, is going to result in significant waste. Over paneling is great, but has limits, which btw, about wire, depending on how much amps you're running, you may need some serious heavy gauge wire, again, pricey. I did it, not suggesting you do (or don't).

yes, anything above 3KW is eligible. Jackery's website also mentions this. First time the price is $999 on their website

Ask other Jackery current customers about the no warranty, warranty offered by Jackery. in other words don't expect warranty service. Read TP reviews prior to purchase. Or see the BBB "F" rating.
