On ATK's recommendation, I paid $15 for the Henckel version I linked in 2017. These spatchcock a chicken in seconds, stay sharp for a year at the speed I use them, and can be sharpened at home or professionaly.
I looked at recent reviews of these and it looks like they rust like the OP. Probably all made in the same factory in China now.
