Any thoughts on this vs the Ryzen 9 7900X? Mostly for casual gaming like CoD and BF6. It'll be with a 4080 Super and 32GB DDR5 6000 CL30

For casual gaming, 9700x. Less power draw, easier to cool and is slightly faster overall (~5%).
Consider the 7900x only if you plan to do some content creation or perform threaded operations (modeling, rendering, coding, etc...) and playing some sim/city builder games.
I have the 9700x paired with a 5080, and at 4K, the CPU is rarely the bottleneck and is able to keep up just fine.
For any resolution lower than 4K, I recommend spending extra for an X3D cpu (preferably the 9800X3D) so that it doesn't bottleneck your 4080 super.
I've played the BO7 and BF6 Betas and I was happy with the performance.Hope this helps!

The practical difference between the two for any gaming will be negligible. The most notable differentiation will be core count and different generation (5 nm vs 4 nm). I would also look at the 9600X if gaming is your primary purpose. The 7900X would be better if you need the extra cores for productivity (editing, etc.).
I've been waiting for a deal on the 9600X but have considered the the 9700X and 7900X for productivity tasks. At $250, it's very tempting.
