The Ooni Koda 16 is a gas pizza oven that shines for fast, restaurant style pies and enough room to handle bigger cooks. The larger size gets praise for quality and flexibility, and it can turn out Neapolitan, New York style, and even other baked dishes with the right flame control. It does take practice, though, with peel handling, dough prep, and planning ahead for ingredients and accessories. The price also feels steep for occasional use, especially once propane refills and supplies are factored in, making it a better fit for frequent pizza nights.

I've found these make good NYs if you heat to 3/4 max temp and kill the burner for the first ~5 minutes of cooking.
I'm curious how hot you are saying 3/4 max temp is, and did you actually measure it with an infrared thermometer or something?

On a side note, I played around with making a DIY "door" for a pizza party I threw last weekend, basically a sheet of aluminum that blocked most of the bottom and left an inch or two of space on the top and sides for air intake. It has potential, but kind of screwed up my routine as I was getting much hotter stone temps than I was used to. The door was a bit janky, and the small wingnuts I had used as part of the assembly actually melted after the 3rd pizza! I'm guessing they were made of Zinc which melts at 780F.

Yeah I turn the knob to 3/4 open and it sits at around 650-750F depending on the area of the stone and the ambient weather, compared to near 900F for when I do neopolitans. I also considered doing the door method to reduce pre/re heating time but a lot of what I have read online is to not do that with the oonis. Apparently it does not let you get a clean burn on gas, and can damage the flame sensor in the rear of the oven.

Thanks for the quick reply. I actually posted this before getting to your response to the other guy who commented on your NY pizza process. FWIW, I've found the best results for Neopolitans to be very similar to you, max heat, then turn down for the first 60 seconds or so, then back up to max for the finish. That was what I did as well when using the door, and then getting surprised by burnt bottoms. My guess is with the use of the door and the hotter stone, I could have kept the burner on high from the start and just started managing the pie sooner. Unfortunately the door self destructed, and with guests wanting pizza's I went back to the normal method and stopped playing around Smilie

If the price seems high to you, just think of this like a gas grill- don't expect to use every day but still does the job perfectly when you want to use it

Really like mine, but there is definitely a learning curve to using this.

And it's a lot of prep work before making pizza. One of the the biggest hurdles is the dough; if you choose to buy it from the store you need to let it get to room temp before shaping it, and if it is frozen you'll also need to thaw it. I like making my own dough now but it's an extra step to the process and I normally like to let it cold rise in the fridge around 3-4 days in the fridge before using it, so it def has to be planned ahead of time. Then you need launching peels (I prefer wood), cornmeal or semolina flour to spread on the peels to stop the bottom of the dough, turning peel (metal), pizza pans, and of course all your ingredients. My go to sauce is Contadina in a squeeze bottle (game changing compared to glass jar ones) and if possible finding low moisture whole milk shredded mozzarella. I found Sam's Club sells 5 lb bags large shred which is PERFECT for pizzas.

There's definitely a reason why these end up on marketplace a lot, but if you persevere and start getting the hang of making pies it is great for parties and when guests come over (being impressive that you can make your own restaurant quality pizza!!)
Shredded mozzarella perfect for pizza???? Where did you get this from? Please shred your own mozzarella and compare it. Stop misleading people ....shredded mozzarella perfect for pizza ....
