The primary factors that degrade coffee are air, moisture, light, and heat. To keep your beans fresh, you need to protect them from these four elements. If you buy Lavazza whole beans in bulk and don't plan to use them right away, the freezer is a great option, but you need to do it correctly. Portion the beans into smaller, airtight containers or vacuum-sealed bags, so you can take out just what you need without thawing and re-freezing the entire batch, which ruins flavor. When you're ready to use a frozen portion, let the sealed container come to room temperature before you open it to prevent condensation from forming on the beans.

I like Lavazza but hadn't tried the Qualita yet -- wondering if I should take a shot with 5 bags; seems like a lot if I don't like it...

If you like super crema you will like Qualita Rossa. They are very similar in my opinion. Super crema is 60% arabica 40% robusta. Qualita Rossa is 70% arabica 30% robusta.

You can mix and match different blends to find your favorite. For example, if you've never tried it, grab one bag of their Qualità Rossa, and fill the rest of your order with the blends you already love.

I wish I saw this yesterday before I picked up 2.2lbs of other whole bean coffee. I still ordered four 2.2lb bags of whole bean Lavazza for $52.49. Suggestions on how we should keep them fresh? Is freezing a good option?

In my opinion and if you're making cold brew, here's what works best for me. I've found that the Qualità Rossa is actually great for cold brew. It's super smooth and rich with a chocolatey flavor because the cold process cuts out the usual bitterness. The Lavazza ¡Tierra! Selection is also a great choice if you want to try something more premium. The key is to always buy whole beans and grind them right before you brew; make sure you use a really coarse grind for your cold brew so it doesn't over-extract and get weird during the long steep time.
