For most people, the XL ATX is an awesome all purpose bike and is a STEAL for $379. I paid around $600 for mine 20 years ago and still ride it.

I have zero understanding of MTB. What should I be looking for as a noob rider?

I have the 2021 Stance and I've put maybe 2000 miles on it in a variety of terrain situations. Super happy with it and I paid pandemic pricing ($1600) for it.

Don't spend much. Start on hard tail and see if you like riding. Your butt will hurt for a few rides and then the pain just goes away. Find a facebook group to ride with.

If you can get one like this below used...for 200ish....start there.

If you're going offroad, the stance is nice as an entry level full sus bike.
If you're spending time on the road, I'd skip it. There is no rear lockout. It bobs a lot.

I considered one for my son when it was $1k and decided it was going to be a bad fit for his riding. Ended up buying a Giant Fathom for more money for a hard tail.

What's the difference between stance 29 1 and 2? I mean, I saw the spec sheet and they have different components, but why 2 is better than 1? I have no idea in MTB.

How much do you want to spend? That is sort of the determining factor for MTB.

SRAM SX are pretty low-end components. Shimano Deore are entry-level, but a significant step up from SX. Tektro brakes on both are not great. At this price point, though, you aren't going to get much better. The disadvantage to the Giant brand MTB are the Crest forks they come with, which have a LOT of complaints on reddit, although quality may have been addressed by now. Giant is a HUGE company, so they can afford to make changes to existing products.

Im trying to stay around $800 all-in, but have been trying to get in for months. What would you recommend at that price?

I'm not against upping it to $1000 if that would get a significant upgrade. I currently ride old roadbikes with thicker tires and have taken them offroad into the hills a few times

Thank you for the detailed explanation. Is there something else in the same price range as the discounted XL Trance ($1400) which can compete with it?

The Stance, at this price, is a great bike. I can't think of anything, other than the Ozark Trail FS.3 or a Polygon competing near this price point. It you start looking at the XL Trance ($1400), there are other options. JensonUSA has many heavily discounted bikes available.
