Yeah many stores don't have any left.
It was easy enough with Walmart's website to find a local store that did have them in stock and place an order for pickup.

That depends. RAM prices are quite high right now. DDR5-6000 should work fine. Slightly better timings, like CL30, would be better, but I wouldn't be too picky right now.
