Please avoid this at $81. It has never been worth $300. It should be perfectly adequate but will never satisfy.

Why do manufacturers brag about 20 bar and even 15 bar? It's been settled for decades now that 9 bar is the optimal pressure for espresso. Everything else is just BS for the uninformed

I get your point, but running any machinery at max capacity is a recipe for early burn out. Having some overhead power means it will last longer.

Not that a "plum chef" machine is going to have any real longevity, but nice to know it can likely actually hit 9 bar while it's still working. It doesn't matter if you're buying from one of the big names, but for a budget machine it's worth knowing the specs.
