YMMV, I don't see multi buy discount, only $5 off 20+

Are there any deals on zero/diet version?

That is the discount, you have to do S&S to get it to the OP price for 5.

My question is: why does it make up it's own S&S date instead of adding it to my current order? On the other hand, I'm offered $3 digital credit for having it delivered before my S&S date anyway. Bizarre.

Yeah, it is a recent pain in the a$$ addition, but can be helpful sometimes. If you want it on your normal day, click on the "change first delivery date" link in the S&S section.

I started to do that, but decided to go for the $3 digital credit and have it delivered on a day that works for me anyway. Retired, at home 4 days of the week, and try to get deliveries on those days. (Try not to give up senior day at the casino for Amazon...)
